Pork Ja-Ja men with Wokka Udon Noodles

Ingredients
- 80ml (⅓ cup) vegetable oil
- 2 spring onions white part and green, thinly sliced kept separate
- 1 small brown onion, finely chopped
- 3 garlic cloves, finely chopped
- 3 tsp grated ginger
- 750g course pork mince
- 1 ½ tsp brown sugar
- ¼ tsp salt
- 125g (½ cup) water
- 80g chilli bean sauce
- 3 tsp tamari or premium soy sauce
- 2 tsp rice vinegar plus extra to taste
- 440g Wokka Udon Noodles
- 2 small lebanese cucumbers, peeled seeded, halved lengthways, sliced
- Coriander leaves and black sesame seeds to serve
Instructions
- Step 1 - Heat oil in a wok over medium-high heat, add white part of spring onion, ginger and garlic and stir-fry until fragrant (1 minute). Add pork and continue stir-frying, breaking up clumps with a spoon, until browned (5 minutes).
- Step 2 - Add sugar, ¼ tsp salt, stir to dissolve sugar then add 125ml (½ cup) water, chilli bean sauce and tamari and stir till liquid has reduced. Add rice vinegar and simmer, stirring occasionally until meat is cooked, sauce is thick and coats the meat. Keep warm Cook noodles according to pack instructions, drain. Divide noodles amongst bowls and spoon pork over noodles. Add cucumbers and garnish with spring onions, coriander and black sesame seeds.
