Ingredients
- 440g pkt WOKKA Singapore Noodles
- 2 tsp lightly flavoured oil
- ½ cup laksa paste
- 2 cups chicken stock
- 400ml can coconut milk
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup shredded cooked chicken
- 150g green beans, cut into 3cm lengths
- Bean shoots, mint leaves, sliced chillies and fried shallots, for serving
Instructions
- Step 1 -Soak the noodles in boiling water for 2-3 minutes to soften. Drain and set aside.
- Step 2 - Add oil to a large saucepan, add paste and cook for 1-2 minutes over a low heat. Add stock, coconut milk, fish sauce and sugar. Bring to a gentle boil and then simmer for 2-3 minutes.
- Step 3 - Add chicken and beans to the soup until the beans are just tender.
- Step 4 - Divide noodles between deep soup bowls and top with laksa soup. Finish with bean shoots, mint, chillies and shallots.
Tip: add some fried tofu puffs or other vegetables you may have on hand.
