Heat oil in wok. Add shallots to wok, add diced onions, diced garlic, diced ginger, cook till onions soften, add pork mince, cook until browned, add sugar, salt, stir to dissolve add water & chilli bean sauce and tamari and stir till liquid has reduced.
Add rice vinegar and simmer.
Cook noodles according to pack instructions & drain.
Garnish with cucumbers spring onions, coriander & black sesame seeds.
