Ingredients

  • 1 x 440g packet Wokka Thin Hokkien Noodles
  • 1 tablespoon vegetable oil
  • 500g beef strips
  • 1 tablespoons brown sugar
  • 1/3 cup red curry paste
  • 1 teaspoon ground turmeric
  • 1 cup chicken stock
  • 400ml can Trident Coconut Milk
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • coriander, to serve
  • lime wedges, to serve

Instructions

  1. Step 1 - Soak noodles in boiling water for 2-3 minutes to soften. Drain and set aside.
  2. Step 2 - Heat oil in a large frying pan or wok over medium-high heat. Add beef and brown sugar and cook for 2-3 minutes or until just browned. Remove and set aside covered in foil to keep warm
  3. Step 3 - Add curry paste and turmeric to pan and cook for 1 -2 minutes or until fragrant. Pour in stock and coconut milk and bring to the boil, reduced heat and simmer for 5 minutes or until thickened. Stir in fish sauce and lime juice.
  4. Step 4 -Divide noodles amongst bowls and pour over curry sauce. Top with beef and serve with lime wedges and coriander.
