  • 1 x 400g packet Wokka Ramen Noodles
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 500g beef mince
  • 1 garlic clove, crushed
  • 1/4 cup red miso paste
  • 2 tablespoons soy sauce
  • 1 litre vegetable stock
  • 1 bunch broccolini, trimmed and cut in half
  • 1 small red capsicum, thinly sliced spring onion
  • slices, to serve toasted sesame seeds, to serve


  1. Step 1 -Soak noodles in boiling water for 2-3 minutes to soften. Drain and set aside. Place eggs in a saucepan over water. Bring to the boil and cook for 3 minutes. Remove from water and allow to cool slightly before peeling.
  2. Step 2 - Heat oil in a large frying pan over medium-high heat. Add beef mince and cook for 5 minutes until browned. Add the garlic, red miso paste and soy sauce and cook for a further 2-3 minutes. Set aside.
  3. Step 3 - Meanwhile, heat stock in a saucepan until boiling. Add the vegetables and cook for 1-2 minutes or until just tender. Divide noodles and vegetables between four serving bowls. Top with miso beef and pour over vegetable stock. Cut peeled eggs in half and place on top of beef. Serve topped with spring onion and sesame seeds.
