Prawn Mee Goreng with Singapore Noodles

Ingredients
- 440g pack WOKKA Singapore Noodles
- 2 tbsp sunflower oil
- 1 egg, whisked
- 400g prawn cutlets
- 1⁄2 red capsicum, thinly sliced
- 2 cups shredded wombok cabbage
- 175g pack WOKKA Mee Goreng Stir Fry Sauce
- Coriander, for garnish
Instructions
- Step 1 - Soak the noodles in boiling water for 2-3 minutes to soften. Drain and set aside.
- Step 2 - Heat a little of the oil in a large frying pan or wok. Pour in egg and swirl to cover the base of the pan. Cook until just set, remove, roll and thinly slice.
- Step 3 - Add remaining oil to the pan and cook the prawns over high heat for 2 minutes.
- Step 4 - Add the capsicum, cabbage, noodles and stir fry sauce to the pan. Toss well until noodles have been heated through.
- Step 5 - Serve Mee Goreng garnished with the egg and coriander.
